Italian Macadamia and Pinenuts Pesto
Seriously, my life is complete: I will never have to buy possibly rancid/processed/weird tasting pesto anywhere anymore! Goodbye Asda Basil Pesto! So long Tesco Green Pesto! This takes literally 5 minutes (10 if you count the time to roast the macadamia) and it’s the most delicious thing ever! Better than some fresh pesto I used to get in Italy! Also you can balance to your taste upping or lowering Grana cheese and garlic. I am telling you: this will change your life!
Nutritional information for 100g: 562 Calories: 33g Fat, 13g Proteins, 4g Carbs.
Ingredients (make 240g pesto approximately)
90g Fresh Basil leaves50g Macadamia Nuts50g Pine nuts50g Grana Padano/Parmesan cheese (grated)50ml Extra Virgin Olive Oil7ml (1tsp) Lemon Juice1 Garlic clove1 pinch of Salt1 pinch of Pepper
Instructions
Roast the macadamia nuts in the oven for about 10 minutes or until golden
Wash the basil leaves and put into a food processor (chopping) along with Grana, Pinenuts and Garlic and turn on until it becomes a paste.
Open food processor, taste, and add salt and pepper to taste (I say taste cause Grana will already add saltiness so you might think it’s already fine for your taste without adding any salt)
Put the lid back on and turn on on lowest speed while, through the funnel, add lemon juice and olive oil. Let it become a mousse-like consistence.
Taste and prepare to be amazed!
